  • Intent of Production

Orthodox tea is harvested and then processed by hand so that the leaves remain whole and intact. This preserves the virtues of the leaf. In orthodox tea, young, small and whole tealeaves are plucked at the tips of the tea bush.

Methods/Tools of Production

To ensure that the best flavor is extracted, orthodox tea exporters India treat each batch of tealeaves with special care. These leaves are delicate in nature and highly vulnerable to damage and adulteration.

After these tealeaves are plucked, they are put through the following processes:

Withering: Leaves are laid out on metal troughs for up to 20 hours in a shaded area. During this time the moisture evaporates from the leaves and turn limp and pliable.

Rolling: The limp leaves are put through rollers and rotated so that they may release chemicals from within their cells. This triggers the oxidation process. Some of the highest-grade orthodox teas are rolled by hand.

Oxidation: The leaves are spread out for 4 hours in a temperature/humidity-controlled room. The air reacts with the chemicals in the leaves and turns them into a reddish-brown color and then to black. If the tea is oxidized for too long, the taste of the tea will be too strong.

Firing: Lastly, the leaves are put on a conveyor belt and taken over a charcoal fire heater for up to 40 minutes. This dries them up and halts oxidation. The leaves are then sorted according to leaf grade, over different sizes of mesh gauges. Young, small and whole leaf teas are priced higher than broken leaves.
